Days 5 & 6: Waste Not. Want Not.

An article in USnews states “…the average American tosses about 25 percent of food and beverages purchased. For a family of four, the money wasted could total from $1,365 to $2,275.”  Sadly I am not surprised by this statistic. A result of having had takeout 4 days the week prior to Labor Day, much of the fresh organic produce from our CSA share was lost. I am the type of person who usually finds creative ways to use leftovers so to throw out so much produce sickened my stomach a bit. Maybe our next 123 day challenge will be ‘123 days of zero waste in the kitchen’.  When our CSA share arrived this week, I promised to make the best effort I could to use it up. Seriously, look how beautiful these vegetables are!
